SIMPLE, SEASONAL CARROT AND CORIANDER SOUP
To make two portions, you will need the following;
Fill a pot a half to two thirds full of boiling water per soup (depending on the consistency you prefer your soup) In this case, to make two soups, use twice that amount.
Three tablespoons of extra virgin olive oil.
Two medium sized yellow onions.
One bulb of garlic.
Sea salt or pink himalayan salt.
Four large carrots.
Two generous handfuls of fresh coriander.
Use organic ingredients where possible.
Broccoli soup, mushroom and parsley soup or tomato and basil soup, can be made, in a similar fashion, by simply substituting the alternative ingredients of broccoli or tomato and basil or mushrooms and parsley etc. for the carrots and coriander, the only difference being that the tomatoes and mushrooms can be sauteed before adding the water, to bring out the flavour.
